If you possess a muffin tin and the ability to not peek in the oven mid-bake, try this easy recipe for a Vermont classic, popovers!
It’s very likely you already have all the ingredients on hand.
5 tablespoons melted butter (there are 8 tablespoons in a stick)
1 cup milk
1 teaspoon sugar
1 teaspoon salt
1 cup flour
Use half the butter to grease your muffin tin.
Place the empty tin in a 425-degree oven.
Combine the rest of the butter, eggs, milk, sugar, and salt.
Whisk in the flour, a little bit at a time. Try to make a smooth batter.
Carefully remove muffin tin from the oven and fill each cup about halfway.
Bake at 425 for 15 minutes, then reduce oven temperature to 350 and bake another 10-15 minutes.
Do not open the oven door until you’re checking for doneness at the very end. They should be golden brown.
Serve immediately with butter and jam.
Popovers rise A LOT in the oven, so make sure there is plenty of clearance above them. Don’t use the top rack in the oven. That being said, even if they don’t triple in size, they will still be delicious.
